  4. Mezclar la tercera parte de la nata con el ganache de chocolate, luego agregar el resto de la nata batida y mezclar con movimientos suaves, para no bajar la nata. Reservar.
  5. En otro cuenco batir las claras con el azúcar glas y agregar el polvo de cacao, batir hasta unir los ingredientes.
  6. Mezclar las dos masas con una espátula y movimientos suaves.
  7. Poner toda la masa al táper y guardarlo al congelador.
  8. Pasados 1 hora, sacar el táper del congelador, mezclar el helado y guardarlo otra vez. Repetir esta operación 2 -3 veces, hasta que el helado se congela. Este paso es muy importante, si lo haces, tu helado quedara cremoso y no se cristaliza. Cuando ya no puedes mezclar, dejas 2-3 horas mas, hasta que se congele.
  9. Servir con salsa de chocolate, para resaltar más sabor a chocolate. Decorar con una hoja de menta.
