- Lo primero que haremos será la salsa, para ello, en un vaso batidor añadimos un huevo, el aceite de girasol, unas 4 anchoas en salazón, una cucharadita de salsa perrins o salsa inglesa, una cucharadita de vinagre, una cucharadita de mostaza de Dijon, medio diente de ajo, una cucharada de zumo de limón, queso parmesano rallado y una pizca de pimienta negra. Lo batimos bien y reservamos la salsa.

- Aquí tengo una lechuga romana que es la lechuga que se suele utilizar para hacer esta ensalada. Le quitamos el culo y las hojas exteriores. Ahora troceamos las hojas y las vamos dejando en un colador o escurridor. Una vez que hemos troceado toda la lechuga, la pasamos por agua y la escurrimos.

Aquí tengo una pechuga de pollo, la troceamos en trozos medianos, más o menos de bocado, le añadimos sal y pimienta al gusto y lo añadimos a la sartén. Y a fuego medio dejaremos que se vayan dorando. Y una vez dorados, los reservamos en un plato.

- Ahora ya solamente falta montar la ensalada. Añadimos la lechuga ya limpia en un recipiente amplio, añadimos el pollo troceado y los cubitos de pan. Os recomiendo que si no vais a comer la ensalada inmediatamente, el pan lo añadáis en el momento de comer la ensalada porque si no, el pan se os quedará blando y perderá todo el crujiente. Añadimos la salsa sobre la ensalada. Y por último, añadimos unas lascas de queso parmesano.
