- Poner en un bol, añadir 1 cucharada de aceite de oliva virgen extra, las hojas de apio y emulsionar. Reservar


- Una vez fríos, pelar y cortar en tiras el pimiento, en dados las patatas y en cuartos el huevo



- Poner en un bol las patatas, los pimientos, la cebolleta, parte de las anchoas picadas reservando dos para adornar y las aceitunas. Aliñar con la emulsión reservada. Mezclar



- Por encima poner el huevo y las anchoas partidas a la mitad



- Servir fría
